Electric blood orange limeade with muddled mint
Ingredients
- 1 handful fresh mint leaves
- 60ml simple syrup (equal amounts granulated sugar and water, heated until sugar dissolves; cool)
- 240ml light rum
- 120ml fresh lime juice
- 120ml fresh blood orange juice
- 240ml sparkling water
- 1L crushed ice
- Blood orange segments and fresh mint sprigs, for garnish

How to make Electric blood orange limeade with muddled mint
1) Using a mortar and pestle, muddle mint until the oils are released (you will smell the mint). Pour the simple syrup into a large pitcher. Add rum, lime juice and blood orange juice and stir vigorously. Add the crushed mint and the sparkling water. Divide the ice among 4 glasses or cups. Pour the limeade mixture into each glass and garnish with blood oranges and fresh mint sprigs.
