Extra spicy refried beans and lettuce, tomatoes and lime
Ingredients
- 2 (425g ) cans refried beans
- 1 (115g ) can, sliced jalapenos, drained and chopped
- 1 tsp hot cayenne pepper sauce, several drops
- 1 tsp garlic powder
- 2 hearts cos lettuce, shredded
- 2 vine ripe tomatoes, seeded and diced
- 1 lime, juiced
- Coarse salt
- 1 tbsp extra-virgin olive oil

How to make Extra spicy refried beans and lettuce, tomatoes and lime
1) Heat tinned re-fried beans in a medium skillet over medium heat. Stir chopped jalapeno, cayenne hot sauce and garlic powder into re-fried beans. Reduce heat to low and keep warm until ready to serve. Combine lettuce and tomatoes in a bowl. Squeeze the juice of 1 lime over the bowl and season the lettuce and tomatoes with salt. Toss to combine. Drizzle extra-virgin olive oil over the bowl and toss lettuce and tomatoes again. Serve re-fried beans along side lettuce and tomatoes.
