  • 1 (125 to 150g) fillet of beef, trimmed and tied
  • 2 tbsp unsalted butter, at room temperature
  • 1 tbsp salt
  • 1 tbsp coarsely ground black pepper

Method

How to make Fillet of beef

1) Preheat the oven to 240C/Gas mark 9. Place the beef on a baking tray and pat the outside dry with a paper towel.

2) Spread butter over the beef with your hands. Sprinkle evenly with the salt and pepper.

3) Roast in the oven for exactly 22 minutes for rare and 25 minutes for medium-rare.

4) Remove the beef from the oven, cover it tightly with aluminium foil, and allow it to rest at room temperature for 20 minutes.

5) Remove the strings and slice the fillet thickly.

Cook's note: Be sure your oven is very clean or the high temperature will cause it to smoke.
