Frozen watermelon-coriander slushy

  • 1 small watermelon, approximately 1kg, cleaned and cut into 5-cm chunks and frozen
  • 150ml white tequila
  • 25ml grenadine
  • 100ml simple syrup (equal amounts of granulated sugar and water, heated until the granulated sugar dissolves; cool)
  • 50ml freshly squeezed lemon juice, about 1 lemon
  • 50ml freshly squeezed lime juice, about 2 limes
  • Pinch salt
  • 30g firmly packed coriander leaves, plus sprigs for garnish
  • 1 lime, sliced thinly into wheels, for garnish
1) Put cut watermelon into freezer bags and store in freezer for at least 5 hours, preferably overnight. This can be done weeks in advance.

2) Put the frozen watermelon into a blender. Add all the remaining ingredients and pulse until the mixture is thoroughly blended and creamy, with flecks of coriander throughout. Pour into 4 ice cold pilsner, lager or any other tall glasses.

Garnish each glass with a coriander sprig and a lime wheel. Serve.
