Ingredients

  • For the pasta:

  • 500g fusilli pasta
  • 2 tbsp extra-virgin olive oil
  • 2 shallots, minced
  • 1 clove garlic, minced
  • 500g medium prawns, shelled and deveined
  • Salt and freshly ground black pepper
  • 2 tbsp white wine
  • For the vinaigrette:

  • 1 tsp lemon zest
  • 55ml lemon juice (about 1 lemon)
  • 55ml extra-virgin olive oil
  • Salt and freshly ground black pepper
  • Salad
  • 2 large oranges
  • 140g rocket
  • 15 large pitted green olives, halved

How to make Fusilli with prawns, oranges and rocket

For the Pasta:

1) Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta reserving about 120ml of the pasta water.
