Garam Masala

  • 8 bay leaves
  • 6-8 cinnamon sticks
  • 25g coriander seeds
  • 25g cumin seeds
  • 1 tbsp fennel seeds
  • 1 tbsp black peppercorns
  • 1 tbsp cloves
  • 2 tbsp green cardamon pods
  • 4-6 black cardamon pods
  • 4-6 star anise
  • 8-10 blades of mace
  • 1-2 tbsp dried rose petals

Lightly toast all ingredients, in a dry frying pan till they release their aroma (except the rose petals). Allow to cool, and then grind together with the rose petals.

Keep in a sealed jar until needed.
