- 2 large sweet potatoes
- Olive oil
- 1 tbsp fresh rosemary leaves
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh chives
- 1 tbsp coarse salt
- 1 tbsp garlic powder
- Freshly ground black pepper
Method
How to make Garlic rosemary sweet potato wedges
1) Peel and cut sweet potatoes into wedges. Place in aluminium foil, sprinkle with olive oil and wrap tightly. Place potatoes on barbecue to cook about 20 minutes. Remove and set aside.
2) Combine the herbs, salt, garlic powder, and pepper in a small bowl. Toss with sweet potatoes and place the wedges directly on the grill. Remove when grill marks appear on all sides and sweet potatoes are tender.
