Ingredients
- 30ml gin
- 1/2 tbsp ginger liqueur (recommended: Domain de Canton)
- 60ml fresh lemon juice
- 30ml simple syrup (equal amounts water and sugar heated until sugar dissolves; cool)
- Club soda
- Lime wedge, for garnish
- Crystallized ginger, for garnish
Method
How to make Ginger collins
1) Add the gin, ginger liqueur, lemon juice and simple syrup to an ice-filled Collins glass.
2) Top with club soda and stir. Garnish with a lime wedge and a skewer of crystallized ginger.
