Ingredients

  • 30ml gin
  • 1/2 tbsp ginger liqueur (recommended: Domain de Canton)
  • 60ml fresh lemon juice
  • 30ml simple syrup (equal amounts water and sugar heated until sugar dissolves; cool)
  • Club soda
  • Lime wedge, for garnish
  • Crystallized ginger, for garnish

Method

How to make Ginger collins

1) Add the gin, ginger liqueur, lemon juice and simple syrup to an ice-filled Collins glass.

2) Top with club soda and stir. Garnish with a lime wedge and a skewer of crystallized ginger.
