  • 900 ml mango juice, room temperature
  • 450 ml water
  • 2 limes, juiced
  • 5 cm piece peeled ginger, grated with microplane
  • 115 g caster sugar

How to make Ginger mango granita

1) Whisk together all the ingredients in a large baking tin. Freeze overnight until solid. Scrape with fork to serve.
