Golden sponge cake with creamy filling
Ingredients
- 1 box yellow cake mix (recommended: Betty Crocker)
- 5 tbsps plain flour
- 250ml milk
- 200g sugar
- 1/2 tsp salt
- 110g vegetable shortening (recommended: Trex)
- 110g butter, softened
- 1 tsp vanilla essence
- Icing sugar and mint, for garnish
Method
How to make Golden sponge cake with creamy filling
1) Mix and bake the cake as directed, using a 20 by 30-cm cake tin. Cool and remove from tin.
2) Using dental floss, slice cake in 2 accross, so you have 2 layers.
3) In a saucepan, combine the flour and milk. Cook and stir until thick. Set aside to cool.
4) In bowl combine sugar, salt, vegetable fat, softened butter and vanilla. Beat with electric mixer until fluffy, then add the cooled milk mixture and beat again until fluffy.
5) Put half the cake in a 20 by 30-cm plastic keeper. Spread all of filling over that, then top with the other half of the cake. Cover with lid and store 1 or 2 days ahead. Garnish with powdered sugar and mint before serving.
