Grandmas apple and blackcurrant crumble
Ingredients
- 1kg bramley (or other cooking) apples
- 100g blackcurrants
- 4tbs white sugar
- 500g plain flour
- 75g butter
- 100g demerara sugar
Method
How to make Grandmas apple and blackcurrant crumble
1) Peel, core and chop the apples into big chunks. Tip them into a large wide ovenproof dish (they need to come to about 1or 2cm below the top edge).
2) Scatter the blackcurrants over the apple, and sweeten with white sugar (a little more or less than 4 tbsp).
(Optional step: stop and take delicious looking photographs at this point. Trying not to get sugar on the camera.)
3) Blend all the crumble ingredients (quickest in a food processor or rub the butter into the flour with fingers, then stir in the brown sugar). Spread the whole lot over the fruit; not too evenly, ought to look rough and rustic.
4) Bake in the oven at 180C/Gas mark 4 for about 30 minutes or until deep red juices start to ooze round the edges of the crumble.
5) Best served warm and with a Jug of cream too, if you are feeling indulgent. Feel immediately less cold and gloomy.
