Grandmother Paul's fried chicken
Ingredients
- Salt and pepper, for seasoning chicken
- Groundnut oil, or solid vegetable fat for frying
- 3 eggs
- 80ml water
- 280g self-raising flour
- 1 tsp black pepper
- 1 (1.1kg) chicken, cut into pieces
Method
How to make Grandmother Paul's fried chicken
1) Heat vegetable fat or groundnut oil in a cast iron skillet to 180C.
2) Beat eggs with water in a small bowl. In a shallow bowl, season flour with pepper. Dip chicken pieces in egg mixture and then coat well in flour mixture. Carefully add to hot oil, in batches if necessary, place lid on top of skillet and fry until brown and crisp.
3) Remember that dark meat requires a longer cooking time (about 13-14 minutes, compared to 8-10 minutes for white meat.)
