French beans with roasted corn and onions
Ingredients
- Water, to cover beans
- 2 tsp sea salt
- 400g French beans, ends cut
- 2 corn on the cob
- 2 tbsp olive oil
- 1 red onion, large, cut into thin rounds
- 2 tbsp chopped garlic
- 60ml white wine
- 1 tsp black pepper
- 45g butter
- 30g diced fresh plum tomatoes
- 3 tbsp grated Parmesan cheese
Method
How to make French beans with roasted corn and onions
1) Bring the water and 1 tsp of the salt to the boil In a medium saucepan. Add the French beans and blanch for 3 minutes. Remove from the water and put into an ice water bath. Drain.
2) Heat the grill or gas burners. Place the cleaned corn on the cob on the grill or burner. Turn the corn and lightly brown all the way around. Allow to cool and then slice the kernels off the cob.
3) Add the oil to a large saute pan over a medium heat, after 45 seconds add the onions and saute for 4 to 5 minutes. Add the French beans, corn and garlic. Saute for 4 minutes, deglaze with the wine, season with salt and pepper and add the butter.
4) Garnish with the plum tomatoes and Parmesan and serve.
