Griddled peach salad with grapefruit vinaigrette

  • 1 grapefruit, peeled, sectioned, juiced
  • 2 large peaches, pitted, sliced into eighths
  • 1 tbsp honey
  • 3 tbsps grapeseed oil, plus more for brushing
  • Salt
  • Freshly ground black pepper
  • 4 cups rocket
  • 3 green onions, finely sliced

1) Preheat the griddle pan to medium.

2) Peel and section the grapefruit with a paring knife over a small bowl to capture any juice. Once you have removed all of the sections, squeeze the grapefruit to extract any leftover juice into the bowl. Place the sections into a separate bowl. Cut the peaches into eighths and brush them with oil. Griddle for 5 minutes until slightly soft.

3) In the bowl with the grapefruit juice, add the honey, oil, salt and pepper and whisk until well combined. In a large salad bowl, add the rocket, grapefruit, griddled peaches, sliced green onions and vinaigrette.

Toss well to combine and serve.
