2) In a medium saucepan, combine the coconut milk, sugar, curry powder and ginger. Bring to a simmer over a medium heat, stirring occasionally, for 5 minutes. Remove from the heat and add the coriander leaves.
3) Meanwhile, cook the somen noodles according to the package directions. Drain the noodles and transfer to a large bowl. Add soy sauce and sesame oil and toss to coat. Transfer to a serving plate and top with the peanuts.
4) Serve the prawns with the coconut sauce and noodles.
