Ingredients

  • For the apple-mint jam:

  • 1kg green apples (preferably granny smith)

How to make Griddled lamb with apple-mint jam

For the apple-mint jam:

1) Quarter apples and place entire apple (seeds and core included) in large saucepan with the bunch of mint, water, vinegar and chili pepper. Bring to a boil then lower to a simmer and cook until apples are tender, 15 to 20 minutes. Technique: Mash Crushing one or more ingredients to create a uniform purée that still has some body.
