Grilled lobster and avocado cocktail

  • 2 (250g) lobster tails, parboiled and flesh coarsely chopped
  • 125ml fresh lime juice
  • 2 tsps honey
  • 2 tbsps prepared horseradish, drained
  • 1 tbsp worcestershire sauce
  • 1 tsp hot sauce (Tabasco recommended)
  • 1 tbsp finely chopped fresh tarragon leaves
  • 1 tbsp extra-virgin olive oil
  • Salt and freshly ground black pepper
  • 1 ripe hass avocado, peeled
  • 1/2 small red onion, thinly sliced
  • 30g chopped fresh coriander leaves
  • 30g chopped watercress
  • 4 lime wedges, for garnish

1) Preheat griddle to medium. Place lobsters on the griddle, cut side down, and cook until slightly charred and just cooked through. Remove meat and coarsely chop.

2) Whisk together lime juice, honey, horseradish, Worcestershire, hot sauce, tarragon, and olive oil in a medium bowl. Season with salt and pepper, to taste. Add the grilled lobster meat, avocado, and watercress.

3) Serve in martini glasses and garnish with a lime wedge.
