Grilled prawns scampi style with soy sauce, fresh ginger and garlic
Ingredients
- 60ml plus 1 tsp soy sauce
- 2 tbsps plus 2 tsps toasted sesame oil
- 2 limes, juiced
- 2 tsps honey
- 2 (5cm) piece fresh ginger, finely grated
- 4 cloves garlic, finely chopped
- 120ml canola oil, divided
- 600g large (21-24) prawns, peeled and deveined
- 110g butter, softened
Method
How to make Grilled prawns scampi style with soy sauce, fresh ginger and garlic
1) Whisk together 60ml of soy sauce, 2 tbsps sesame oil, the lime juice, honey, ginger, garlic and 60ml of rapeseed oil in a bowl and add to a food processor. Add the softened butter and pulse until thoroughly combined.
2) Season the prawns with salt and pepper and brush mixture onto the prawns. Place onto preheated griddle and cook in a single layer for 1 to 2 minutes per side, or until just cooked through.
