1) Preheat barbecue or griddle over medium-high heat. Oil the griddle or a baking sheet tray.
2) With your hands, work the dough ball out onto a lightly floured surface into a rectangular shape about 2 1/2cm thick. The shape doesn't have to be perfect. Place the dough on a lined baking sheet. Brush with some olive oil, then sprinkle top with grated Parmesan. Place one row of courgette rounds along one side of dough. Working in and along side of the courgette, arrange one row of shallots followed by another courgette row. With your fingertips, gently press vegetables into the dough. Drizzle with 1 tablespoon of olive oil.
3) Place on preheated griddle and cook for 20-25 minutes until golden brown and crispy. Remove from griddle, cut and serve warm.
