Guacamole salad

  • 250g grape tomatoes, halved
  • 1/4 tsp ground cayenne pepper
  • 1/2 tsp minced garlic
  • 1/2 tsp freshly ground black pepper
  • 1 tsp salt
  • 60ml good olive oil
  • 60ml freshly squeezed lime juice
  • 1/2 tsp freshly grated lime zest
  • 2 tbsp minced jalapeno peppers, seeded
  • 115g small diced red onion
  • 425g tin black beans, rinsed and drained
  • 1 yellow capsicum, seeded and 1cm diced
  • 2 ripe avocados, seeded, peeled, and 1cm diced
1) Place the tomatoes, yellow capsicum, black beans, red onion, jalapeno peppers, and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper and pour over the vegetables. Toss well.

2) Just before you're ready to serve the salad, fold the avocados into the salad. Check the seasoning and serve at room temperature.
