  • 200g fine vanilla wafer crumbs
  • 160g icing sugar, divided
  • 50g walnuts, toasted and chopped fine
  • 65ml plus 1 tbsp dark rum
  • 65ml golden syrup
  • 30g butter, melted

Method

How to make Holiday rum balls

1) In a large bowl combine wafer crumbs, 110g icing sugar, walnuts, rum, corn syrup, butter and knead together.

2) Roll into 2.5cm balls and then into remaining icing sugar. Arrange rum balls on a baking sheet, cover well with plastic wrap and let sit for 48 hours.
