Honey and mustard prawn skewers
Ingredients
- Wooden barbecue skewers
For the prawns:
- 18 large raw prawns, shelled and deveined, tails intact
- 3 limes, cut into 8 wedges
- 3 lemons, cut into 8 wedges
- Olive oil, for brushing
For the sweet chilli dip:
- 2 tbsp clear honey
- 1 tsp dijon mustard
- 1/4 tsp dried chilli flakes
Method
How to make Honey and mustard prawn skewers
1) Soak six wooden skewers in water for at least 30 minutes.
2) For the prawn: Slide 3 prawns onto each skewer alternating with the lemon and limes wedges. Brush all with a little olive oil to prevent sticking. Cover and chill until ready to cook.
3)For the Sweet chilli dip: In a small bowl mix the honey, mustard, and crushed red chilli flakes. Cover and set aside until ready to serve.
4) To cook the skewers, either sear on a hot bbq or under a preheated grill, turning once until the prawns are pink and cooked through, about 5 to 7 minutes.
5) Serve the skewers, brushed with the Sweet chilli dip.
