Honey and mustard prawn skewers
Ingredients
For the prawns:
- 3 limes, cut into 8 wedges
- 3 lemons, cut into 8 wedges
- 18 large prawns, shelled and deveined
- Olive oil, for brushing
- Special equipment: wooden skewers
For the sweet chilli dip:
- 2 tbsp clear honey
- 1 tsp dijon mustard
- Pinch crushed chilli flakes
Method
How to make Honey and mustard prawn skewers
For the prawn skewers:
1) Soak the wooden skewers in water for at least 30 minutes. Skewer the lemon and lime wedges with 2 to 3 large prawns on each stick. Brush with oil so they don't stick to the grill.
2) Either sear on a hot barbecue or under the grill until the prawns are cooked, about 5 to 7 minutes.
For the chilli dip:
1) In a small bowl mix the honey, mustard and crushed chilli flakes.
2) Brush over the cooked skewers and serve.
