2) Combine the honey, lime, garlic, thyme, salt and pepper in a small bowl and mix well. Brush the vegetables with the honey mixture. Place the vegetables on skewers, if desired.
3) Heat the barbecue until the coals are somewhat grey with ash; the flame should be low. Lightly oil the barbecue rack with vegetable oil. Place the skewered or loose potatoes, courgettes, aubergine, green and red pepper, and onion directly on the greased barbecue.
4) Cook the vegetables for about 10 minutes, brushing them with the honey mixture every few minutes and turning them after 5 minutes.
