Ingredients
- 225g plain flour, plus extra for dusting
- 1/8 tsp salt
- 125g cocoa powder
- 2 tsp bicarbonate of soda
- 1 tsp baking powder
- Vegetable oil for greasing
- 115g unsalted butter, room temperature
- 400g caster sugar
- 250ml strong coffee, cooled
- 250ml plain yoghurt
- 3 eggs

How to make Hopped-Up On Caffeine Rich Chocolate Cake
Sift the plain flour, salt, cocoa powder, bicarbonate of soda and baking powder together.
Preheat the oven to 180°C/gas4. Grease and flour a 20cm round cake tin.
In a large bowl put the butter and sugar. With a hand-held electric mixer on medium speed, beat until pale and fluffy. Scrape down the sides of the bowl.
With mixer on low speed, and add the coffee, a little at a time, beating well after each addition. Add the yoghurt and then the eggs, one at a time. Continue to mix on low speed until combined. Scrape down the sides of the bowl.
Gently fold in the flour mixture until combined. Pour the batter into the prepared cake tin until half full. Use any excess batter for cupcakes.
Bake the cake in the oven for approximately 25 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool tin for 15 minutes before turning cake out onto a rack to cool completely. Serve with your favorite ice cream or a yummy chocolate icing.
