Hungarian Goulash Soup

  • In the box:

  • Sweet paprika
  • Goulash spice and herb blend
  • Beef stock pot
  • Shopping list:

  • 6 thick pork sausages, chopped into thick bite-sized pieces (with chilli or other flavouring if available)
  • 1 red onion, finely chopped
  • 1 large carrot, peeled and sliced
  • 1 red pepper, chopped into small pieces
  • Optional:

  • Handful of parsley, roughly chopped
  • Mashed potato or crusty bread, to serve
  • From your cupboard:

  • Sunflower or olive oil

1. Heat some oil in a large saucepan. Once the oil is hot, add the sausages and fry at a high heat for 1-2 minutes, until browned. Remove from the pan.

2. In the same pan, fry the onion, carrot and pepper for 2-3 minutes adding more oil if needed. Then add the sweet paprika to the vegetables stirring quickly. Fry the vegetables for another 2 minutes.

3. Return the sausages to the pan along with the beef stock pot and 500ml of water. Stir the mixture thoroughly. Then add the goulash spice and herb blend. Bring to the boil and simmer gently for 15 minutes.

4. Serve the goulash in bowls with the optional parsley sprinkled on top.
