Jicama and watermelon salad
Ingredients
- 125ml fresh orange juice, plus 1 tsp zest
- 60ml fresh lime juice, plus 1 tsp zest
- 2 tbsps honey
- 1 tsp ground black pepper
- Salt
- 1 jicama, cut into matchstick-sized pieces
- 400g watermelon in 5-cm chunks
- Handful of roughly torn fresh mint leaves

How to make Jicama and watermelon salad
1) Whisk together juices, honey, pepper and salt in a large bowl.
2) Add the jicama, watermelon and mint and toss to coat.
