- 85ml mayonnaise
- 2 tbsps cider vinegar
- 1 (310g) can mandarin oranges, drained, liquid reserved
- 100g grated jicama
- 200g shredded red cabbage
- Salt and freshly ground black pepper
Method
How to make Jicama citrus coleslaw
In a large bowl, combine mayonnaise, vinegar and 2 tablespoons of liquid from mandarin orange can. Add jicama, red cabbage and mandarin oranges. Toss to combine. Season, to taste, with salt and pepper.
