Jicama citrus coleslaw

  • 85ml mayonnaise
  • 2 tbsps cider vinegar
  • 1 (310g) can mandarin oranges, drained, liquid reserved
  • 100g grated jicama
  • 200g shredded red cabbage
  • Salt and freshly ground black pepper
In a large bowl, combine mayonnaise, vinegar and 2 tablespoons of liquid from mandarin orange can. Add jicama, red cabbage and mandarin oranges. Toss to combine. Season, to taste, with salt and pepper.
