Ingredients
- 8 large kumquats
- 6 whole mint leaves
- 1 lime
- 60ml simple syrup, recipe follows
- 60ml light rum
- Soda water
For the simple syrup:
- 450g sugar
- 480ml water
Method
How to make Kumquat mojito
1) Slice the kumquats into coin-sized shapes, discard the seeds and reserve 4 slices. Put the remaining kumquats into a mixing glass. Add the mint leaves, simple syrup, and lime wedges, and muddle the ingredients.
2) Fill the glass with ice, add the light rum and top up the glass with soda water. Stir and garnish with four reserved kumquat slices.
Simple syrup:
1) Combine the sugar and water in a nonreactive 2L heavy-bottomed saucepan over a medium-high heat and bring to a boil. All the sugar crystals should completely dissolve.
2) Remove from the heat and pour into a clean medium-size bowl. Cool completely before using. Simple syrup can be stored in the refrigerator, indefinitely, if kept in an airtight container.
