Lake rat peppers

  • 8 Poblano chillies
  • 12 prawns, cleaned, cooked
  • 12 crawfish (also known as crayfish), cleaned, cooked
  • 1 (250g) packet cream cheese, room temperature
  • 2 cups shredded spicy cheese, room temperature
1) Wash and dry the chillies. Cut in half crosswise and remove seeds.

2) Roughly cutlet the prawns and crawfish and mix with the cream cheese and spicy cheese.

3) Fill the chillies with the cheese mixture. Griddle until done, about 5 minutes.
