1) Peel the crust off the outside of the leftover pieces of pie and line the inside of small ramekins or coffee cups with the pie crust pieces.
2) Spoon the pumpkin pie filling (straight from the pie!) into the ramekins, distributing it evenly.
3) Sprinkle a tablespoon of sugar over the filling in each ramekin. Using a mini blow torch, torch the top until the sugar has caramelised. The ramekins can also be browned under a grill. If using a grill, place the cups inside a pan filled with 2 1/2cm of water and place under the grill until just browned on top.
