Lychee Mojito

Ching shows how to make her Chinese twist on this Cuban classic.
  • 4 tbsp good-quality grade A maple syrup
  • 1 bunch fresh mint
  • 2 limes, cut into eighths
  • 8 lychees, canned
  • Crushed ice
  • 4 tbsp lychee liqueur
  • 8 tbsp Cuban gold rum
  • Sparkling water

Into four tall tumblers, add one tablespoon maple syrup, about ten mint leaves, three to four lime wedges and two lychees. Just before your guests arrive, muddle together to bring out the flavors.

When your guests arrive, fill each glass with crushed ice, one tablespoon of lychee liqueur and two tablespoons of rum. Then fill the glasses the rest of the way with club soda, garnish with a sprig of mint and serve.
