1. Preheat the oven to 180°C. Grease a muffin pan.
2. Heat the leftover mac and cheese in the microwave for 2 minutes until warmed through
3. Mix the mac and cheese with the rest of the ingredients. Scoop macaroni and cheese into moulds.
4. Bake for 15-20 minutes or until golden. Allow to cool a bit before removing from the pans (so that it becomes stiff and easier to remove). Garnish with pea shoots and micro herbs and serve.
