Mac 'n' cheese cake

Ingredients

  • 50g fresh lasagna sheets
  • 250g pure fine cane sugar
  • Vegetable oil spray
  • 3 fresh strawberries
  • 225g goat cheese
  • 225g cream cheese
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • 2 tbsp strawberry or raspberry jam
  • Special equipment: 5cm round mould

Method

How to make Mac 'n' cheese cake

1) Using a round 5cm mould, cut the lasagna sheets into 6 circles and boil for 2 minutes with 100g sugar. Coat the lasagna sheets in vegetable oil spray and dust with sugar, then set aside.

2) Slice the strawberries, coat in sugar, and set aside. Fold the goat cheese and whipped cream cheese together, add 100g sugar and the lemon zest and lemon juice, to taste.

3) Place the round 5cm mould on a lasagna circle and place a strawberry slice at the bottom. Fill halfway with cheese mixture, add jam, top with more cheese and pat the cheese down. Pull the mould off, place the strawberries on top and sprinkle with sugar.
