Cut the avocados in half and remove the stones.
Mash the avocado flesh with a fork, add the lemon juice, coconut milk, hot sauce, salt and pepper.
Shell the prawns.
Peel the mango, take one half to trim it into a fan shape and the cut the other half into cubes.
Chop the coriander and keep some whole leaves for the decoration. Trim the chives into 8cm lengths.
Mix the chopped coriander into the guacamole.
Fry the shrimps in a very hot oil, and fire it with the rum.
In the emptied avocados, put the mango cubes and the guacamole.
Place the prawns over it and add the coriander leaves, chive sprigs and the mango fan.
