Ingredients

  • 1 ripe mango, peeled, seeded and chopped
  • 60ml lime juice (2 limes)
  • 1 tsp sugar syrup, recipe follows
  • 185ml white rum
  • Crushed ice
  • For the sugar syrup:

  • 200g sugar
  • 200ml water

Method

How to make Mango daiquiris

1) Place the mango and lime juice in the bowl of a food processor fitted with a steel blade. Process until blended.

2) Add the sugar syrup and the rum. Pulse to mix. Divide the mixture between glasses full of crushed ice.

To make sugar syrup:
1) Heat the sugar and water in a small saucepan until the sugar dissolves.

2) Chill before using, Store leftover syrup in the refrigerator.
