Ingredients
- Ice
- 60ml blanco tequila
- 30ml cointreau or triple sec
- 1 lime, juiced, plus a lime wedge, for garnish
- 60ml sweet and sour mix
- 150g fresh mango chunks, plus a mango slice, for garnish
Method
How to make Mango island margarita
1) In a shaker combine the ice, 30ml of the tequilla, 15ml of the cointreau or triple sec, the juice of 1/2 lime and 30ml of the sweet and sour mix. Shake the ingredients and strain over ice into a pint glass.
2) For the second part, add the remaining ingredients, plus 200g of ice to a blender. Blend all the ingredients until smooth.
3) Pour the frozen mango margarita into the pint glass with the margarita, to create a floating island.
4) Garnish with a mango slice, lime wedge and serve.
Cook's Note: This is made in 2 parts, half frozen and half on the rocks, and then combined.
