Mango Lassi
Ingredients
- 220g chopped mango flesh
- 8fl oz plain soy yogurt
- 120ml soy milk
- 4 tsp simple syrup, recipe follows
- Pinch ground cardamom, plus more, for garnish
Method
How to make Mango Lassi
1) Put the mango flesh, yogurt, milk, simple syrup and a pinch of cardamom into a blender and blend for 2 minutes.
2) Pour into individual glasses, over ice. Sprinkle with a little cardamom and serve.
For the simple syrup:
1) In a small saucepan heat the sugar and water and bring to a boil. When the sugar is completely dissolved remove from the heat and cool to room temperature.
2) Refrigerate, covered, for up to 1 week.
