How to make Maple-bourbon brined turkey legs
1) Put all the ingredients - except the turkey drumsticks - in a medium pan over a low heat. Cook, stirring to combine and dissolve the salt. Remove from the heat and leave to cool.
2) Add the turkey drumsticks to a large resealable plastic bag, and pour in the cold brine. Seal the bag well, and put into a bowl (in case of leaks). Refrigerate for 24 hours.
3) After 24 hours, remove the turkey from the marinade and discard the brine. Preheat the oven to 180C/Gas 4.
4) Put the turkey drumsticks on a rack over a roasting pan, making sure there is room between each for even cooking. Roast for 90 minutes.
5) Remove the turkey from the oven to a serving platter and serve hot or cold.
