For the Financiers, add all the dry ingredients in a bowl, add the maple syrup to the nut brown butter then pour this into the bowl. Finally add the egg whites and mix well. Pour into round molds – 7cm in diameter by 3cm high. Cook in a pre-heated oven at 180°C for 20 minutes.
For the figs, add the butter to a frying pan, add the figs, rosemary and cook for 2 minutes. Pour in the maple syrup, cook for a further 2 minutes and remove.
To serve, take the financiers out of the mold, place on a plate, add the figs and finish with a spoon of crème friache.
