Mashed potatoes with sauteed mushrooms

Ingredients

  • 110g butter, divided
  • 200g fresh mushrooms, sliced
  • 100g onion, diced
  • 2 tbsps chopped fresh chives
  • 1 clove garlic, chopped
  • 250ml white wine
  • 1kg new potatoes, diced
  • Salt and freshly ground black pepper
  • 120ml sour cream
  • Small amount warmed whole milk

Method

How to make Mashed potatoes with sauteed mushrooms

1) In a saucepan, melt 60g butter and saute mushrooms, onion, chives and garlic. Add wine and simmer for about 15 minutes.

2) In a pot, boil potatoes until tender; drain. Mash potatoes and add remaining butter, salt, pepper, sour cream and warm milk to desired consistency. Combine all ingredients and whip until thick and creamy.

Serve immediately.
