Roast the pork loin at 200°C for 45 minutes or until internal temperature of the pork has reached 60°C.
Grill the radicchio on the BBQ until wilted and charred.
Rest the pork for 20 minutes in warm place.
For the Dressing, finely slice the Pink Lady apples, add honey and the truffle oil and mix. Add the olive oil while mixing until dressing has emulsified and pour the dressing over the radicchio while hot and allow to infuse.
Finish with a squeeze of lemon juice. Carve the pork and serve on top.
