Ingredients
- 375ml double cream
- 4 1/2 tbsp caster sugar
- 4 1/2 tbsp cassis
- 3/4 tsp pure vanilla essence
- 6 meringue shells
- 500g fresh raspberries
Method
How to make Meringues with cassis and raspberries
1) Whip the cream in the bowl of an electric mixer fitted with the whisk attachment. When it starts to thicken, add the sugar, cassis and vanilla.
2) Continue to whip until the cream forms soft peaks. Do not over beat.
3) Spoon the cream onto the meringues and top with the raspberries.
