Miss Leslie's ham salad on biscuits
  • 2 tubes, 6 pieces each, large bake-off biscuits (biscuits are like scones, so you could substitute 12 ready-to-bake scones)
  • 3 tbsps dill pickle relish
  • 3 tbsps american mustard
  • 85ml mayonnaise, just enough to bind salad
  • 25g chopped flat-leaf parsley, a couple of handfuls of leaves
  • 4 spring onions, finely chopped
  • 1 jalapeno pepper, seeded, finely chopped
  • 80g salad olives with pimento, drained, chopped
  • 3 ribs celery, from the heart, finely chopped
  • 450g cooked ham from the deli, 1cm-thick slices, diced
  • Salt and black pepper
1) Prepare 'biscuits' or scones to package directions, 8-10 minutes in the oven. Cool on a wire rack.

2) Combine all remaining ingredients in a bowl and adjust seasonings, to taste.

3) Split cool biscuits and fill with Leslie's delicious ham salad.
