Nalesniki, aka Crepes
Ingredients
For the batter:
- 475ml milk
- 475ml sparkling water
- 1 egg
- 1 egg yolk
- 420g plain flour
- 200g caster sugar
- 1 pinch salt
- 1/2 tbsp bicarbonate of soda
- 1/2 tbsp baking powder
For the filling:
- 925g cream cheese
- 600g caster sugar
- 1 (680g) jar drained, pitted sour cherries in a light syrup
- Cooking spray, for tin
- Whipped cream, for serving
- Chocolate powder, for serving
Method
How to make Nalesniki, aka Crepes
1) Mix all the batter ingredients well in a blender and refrigerate for 1 hour.
2) For the filling, in a large bowl, put the cream cheese, sugar and the cherries. Combine well and reserve.
3) Spray a frying pan with cooking spray. Pour 120ml of batter into the pan and cook until firm (tan, not brown). Turn over and cook the other side. Transfer cooked crepes to a large plate and repeat with remaining batter.
4) Fill the crepes with the cheese and cherry filling and fold as desired. Arrange on a serving platter and serve hot, with whipped cream and chocolate powder.
