Ingredients

  • For the batter:

  • 475ml milk
  • 475ml sparkling water
  • 1 egg
  • 1 egg yolk
  • 420g plain flour
  • 200g caster sugar
  • 1 pinch salt
  • 1/2 tbsp bicarbonate of soda
  • 1/2 tbsp baking powder
  • For the filling:

  • 925g cream cheese
  • 600g caster sugar
  • 1 (680g) jar drained, pitted sour cherries in a light syrup
  • Cooking spray, for tin

Method

How to make Nalesniki, aka Crepes

1) Mix all the batter ingredients well in a blender and refrigerate for 1 hour.

2) For the filling, in a large bowl, put the cream cheese, sugar and the cherries. Combine well and reserve.

3) Spray a frying pan with cooking spray. Pour 120ml of batter into the pan and cook until firm (tan, not brown). Turn over and cook the other side. Transfer cooked crepes to a large plate and repeat with remaining batter.

4) Fill the crepes with the cheese and cherry filling and fold as desired. Arrange on a serving platter and serve hot, with Technique: Whipping A vigorous stirring motion to thicken cream or eggs with either a hand or electric whisk. I know this Teach me, please whipped cream and chocolate powder.
