  • Roasted aubergine slices
  • Spicy pasta sauce
  • 115g shredded mozzarella
  • 25g grated Parmesan
  • 10g chopped fresh basil leaves

How to make Neapolitan aubergine parmesan


1) Preheat oven to 200 degrees C/Gas 6. Coat a large baking sheet with cooking spray.

2) Arrange aubergine slices on prepared baking sheet. Top each slice with an equal amount of sauce and then top with mozzarella and Parmesan. Bake 8 to 10 minutes, until cheese is bubbly. Top with basil before serving.
