Neely's BBQ jacket potato

Ingredients

  • 1 large baked potato
  • 225g grilled turkey, pulled pork, or BBQ ribs
  • 1 tbsp Neely's BBQ sauce
  • 70g grated cheddar, plus more for garnish
  • Soured cream
  • For the Neely's BBQ sauce:

  • 470ml tomato tomato ketchup
  • 235ml water
  • 85g brown sugar
  • 85g white sugar
  • 1/2 tbsp freshly ground black pepper
  • 1/2 tbsp onion powder
  • 1/2 tbsp dry mustard powder
  • 30ml lemon juice
  • 30ml Worcestershire sauce
  • 120ml apple cider vinegar
  • 30ml light golden syrup
  • 30g Neely's BBQ Seasoning
  • For the Neely's BBQ seasoning:

  • 110g paprika
  • 55g white sugar
  • 1 tsp onion powder

Method

How to make Neely's BBQ jacket potato

Preheat oven to 200 degrees C/Gas 6.

1) Split and scoop out potato flesh. Add your choice of meat, Neely's BBQ sauce and cheese, to the potato flesh. Stuff potato shell with mixture and bake for 10 minutes or until heated through. Top with soured cream and garnish with cheese, to taste.

For the Neely's BBQ sauce:

1) Combine all of the sauce ingredients in a stockpot or large Dutch oven. Bring to a boil over high heat, stirring frequently to prevent sticking. Reduce temperature to low and simmer, uncovered, for at least 2 hours.

For the Neely's BBQ seasoning:

1) Mix all the ingredients and set aside.
