Ingredients
- Vegetable oil, for frying
- 210g self-raising flour
- 1 tbsp The Lady's house seasoning, recipe follows
- 250ml buttermilk
- 1 egg
- 400g okra, chopped
- For The Lady's house seasoning:
- 200g salt
- 50g black pepper
- 50g garlic powder
Method
How to make Okra fritters
1) Heat the oil in a cast iron Dutch oven to 180C.
2) In a large bowl add flour, seasoning, buttermilk and egg. Mix well together. Add okra to mixture and coat. Using a tablespoon, scoop mixture into the hot oil. Constantly flip fritters to cook and brown evenly, about 12-15 minutes.
2) Remove fritters with a slotted spoon and drain on kitchen towels. Place in a serving bowl or platter and serve hot.
For the seasoning:
Mix ingredients together and store in an airtight container for up to 6 months.
