1) Preheat oven 230C/Gas 8.
2) Lightly flour a clean work surface. Knead dough into a ball. Roll dough out into a large rope.
3) Form a large figure eight with the dough on a baking tray. Brush with the egg and sprinkle generously with salt. Bake for 15-20 minutes until risen and nicely browned.
Let cool before serving. Serve with good, spicy mustard.
